Pizza Sauce, Really?

Tonight we had all the fixings to make Spanish rice, except we didn’t have any tomato sauce or tomato paste. We had some store bought produce items that they apparently called tomatoes, but nothing to impart any real flavor.

So I went out on a limb. I had some pizza sauce, which included the oregano flavor needed for the dish. Combined with the fresh tomato, some chopped celery, onions, Serrano peppers, and seasoned with cumin, chili powder, garlic, white pepper and a little chicken base and butter…it worked!
Sometimes you have to get a little creative with your replacements.
