Description

Super easy recipe to pull together, day-before, or day-of, and serve with Ruffles (the best) or a cracker of your choice or crusty sourdough bread.

Ingredients
  • 13 oz clams, chopped or minced (drained)
  • 8 oz cream cheese (original or whipped)
  • 8 oz sour cream
  • 5 ea green onions (thin sliced)
  • 1 tbsp lemon juice
  • 1-2 pinch kosher salt
  • 1/4-1/2 tsp black pepper (ground)
Instructions
  1. Mash down the cream cheese, blend in the sour cream and mix until smooth.

  2. Add clams, lemon juice, salt and pepper. Combine thoroughly and whisk out any lumps.

  3. Transfer to serving bowl. Cover and chill until ready to serve. Serve with heavy ridged potato chips, such as Ruffles, or your favorite dipping cracker or chunks of sourdough bread.

Note
  • Growing up, the cream cheese didn't come whipped. So my mom would always give me a fork and put me in charge of mashing down the cream cheese, by hand, to a smooth and creamy consistency.
  • Save that drained clam juice for adding to your cioppino or for mock abalone.

The DeMercurios
Chef and Mrs Chef

Instead of a New Year’s resolution, Christa DeMercurio asked her chef husband to be her tutor/mentor/sage (not the herb) for the 2018 year, teaching her his tips, tricks and wisdom in the culinary department. She figured that after over a decade together, their bakers dozen year should be a fun journey of cooking. Her husband, Cal DeMercurio, has been in the food service business since, well, forever (40-ish years). When it comes to the restaurant life, she's always been more comfortable in the Back Office and sometimes Front of the House, but never really ventured into the professional kitchen. She's obtained a few skills by observing her husband over the years and then experimenting here and there at home. Now she's taken her apprenticeship to the next level with him cooking side by side with her.

Thank you for cooking with us!   Culinarily Yours, Chef Cal and Christa DeMercurio
